Vegetarian Curry

1 T Oil
1 Onion - Diced
1 T Red Curry Paste
1 Tin Coconut Cream
1 T Soy Sauce
1/2 T Sugar
2 Medium Kumara (diced)
1 Tin Chickpeas (drained and rinsed)
2 C Rice

1. Brown the onion in a small amount of oil in a large frying pan on a medium heat
2. Add the red curry paste to the frying pan and stir for 1-2 mins until it smells fragrant
3. Add the kumara and chickpeas to the frying pan and stir to coat in the curry mixture
4. Add the coconut cream, sugar and soy sauce to  the frying pan. Cover and simmer on a low heat for 15-20 mins until the kumara is cooked through (add a small amount of water if the sauce is getting too thick)
5. Serve the curry with rice and garnish with coriander
