Potato Salad

1 kg Potatoes (perlas are best)
1/4 C Sour Cream
1/4 C Best Foods Mayonnaise
1 t Wholegrain Mustard
Chopped chives

1. Chop the potatoes approximately the same size, oil the potatoes in a saucepan until they are just cooked.
2. Drain the potatoes and chill in the fridge
3. Add the sour cream, mayonnaise, chives, mustard, salt and pepper to the potatoes and stir gently to combine evenly
4. Garnish with a few more chives to serve
5. Keep refrigerated until required

**Optional extras; Crispy bacon on the top, hard boiled egg mixed through, spring onion instead of chives
