Nourish Bowl

1C Rice - Cooked
1 Can Chickpeas, Drained and Rinsed
1C Lettuce leaves (spinach/rocket preferred)
5 Cherry Tomatoes - Halved
1 Carrot - Finely Grated
1/2 Avocado - Sliced
1 Kumara
1 Red Onion - Sliced
2T Coconut Oil
1-2t Curry Powder
2t Hummus

1. Coat the Kumara & Red Onion in 1T Coconut oil, salt & pepper and roast in the oven for 30-35 mins at 180 (the onion won't take as long as the Kumara)
2. In a frying pan, melt 1T of Coconut oil, add the chickpeas and toss to coat, add 1-2t of curry powder and toss to coat, heat through for 1-2- minutes
3. Cook the rice according to packet directions
Assemble the Buddha Bowl
1. Start by using the lettuce leaves to frame the bowl, scatter around the outside of the bowl
2. Make small piles of the other ingredients around the bowl and lastly place of big dollop of hummus or dressing in the center of the bowl.
3. You can mix and match any similar ingredients and add meat if you prefer
