Homemade Pasta Sauce

2 Onions - Diced
4 Garlic Cloves - Grated
2T Olive Oil
2kgs Tomatoes - Chopped
2T Brown Sugar
Salt & Pepper
Fresh Basil Leaves

1. Heat the oil in a very large saucepan or soup pot, add the onion and cook for 4-5 mins until soft
2. Grate the garlic into the onion and cook for 2-3 mins until it smells fragrant
3. Add the chopped tomatoes and brown sugar, cover with a lid and bring to the boil, keep the lid on and turn the heat down to a simmer and cook for 1.5 hours (stirring occasionally)
4. Take the lid off and bring the mixture up to a steady boil for 30 mins to reduce and thicken (stir often)
5. Remove the pot from the heat and using a stick blender, blend the tomato mixture to the consistency you prefer (chunky or super smooth)
6. Taste and season with salt & pepper
7. Stir through a handful of fresh basil leaves and use in pasta bakes or spaghetti bolognese
8. The sauce can be frozen for later use
