Boost Balls

Ingredients
1C Pitted Dates
300g Toasted mixed nuts
1/4 C Cocoa
3/4C Desiccated Coconut (toasted)

Method
1. Cut dates in half, place in 3/4 C of water, simmer for 5 minutes then leave to cool.
2. Using a food processor, blitz the nuts until they are like breadcrumb texture.
3. Lightly toast the coconut in a frying pan.
4. Combine the dates, nuts, cocoa and half the coconut together in a bowl.
5. Spoon tablespoon amounts of mixture and roll in the remaining coconut.
