Beef Curry

500g Diced Beef
1 Onion – diced
410g Tin of Valcom red curry
400ml Tin of Coconut Cream
1 Orange Kumara – Chopped
Green Beans
1 ½  Cups of Rice

1. In a frying pan, brown the diced beef and onion
2. Add the Tin of Valcom Red Curry and Coconut Cream, bring to the boil and simmer uncovered for 20 minutes
3. Cook the kumara in a saucepan with water until soft
3. Cook the rice according to packet directions
4. Steam or boil the green beans
5. To serve, spoon the cooked rice into a bowl and top with some cooked Kumara, then spoon over the cooked beef and curry sauce, top with a small amount of fresh Coriander
6. Serve with the cooked beans
